Horseradish making
Steps to make horseradish:
It was an adventure. I let my horseradish grow in a controlled environment in a barrel so it does not spread everywhere. After 4 years I harvested the root. The cleaning up took a lot of time at least one hour to get all the dirt off and cut the outer layer off. Once everything was clean I used a food processor to shred the root. I made the mistake to smell the shredded product. It was very strong and I could not withhold tears for a while.
Once I had the shredded horseradish I wanted to create more of a paste to use on veggie burgers and in salads. I added some water and vinegar and used an electric wand to make the horseradish paste.
I used some of the shredded horseradish to make a simple tomato salad. I cut up a handful of tomatoes added a tablespoon full of shredded horseradish and a pinch of fresh cut rosemary. Enjoy.
We got a lot of apples from a friend and was trying to create something new. I used honey crisp apples for this dish. I shredded about 2 apples with a food processor. Added about a 1/2 cup shredded horseradish and 2 sliced green onions. Mix and enjoy.
