Mushroom Soup - Gomba Leves

Ingredients:

2-3 types of your favorite mushrooms 4-5 cups sliced

1 cup cut up carrots

1 cup cut up parsley root or parsnip

1/2 cup cut up onions

Salt to taset

1 Tbsp Hungarian paprika

1/4 cup cut up parsley

1/2 cup spinach cut up

1 liter water (might need more want water to cover all vegetables.

1 fresh or frozen cup up tomato

Saute onions for 2-3 minutes in a big pot, add a pinch salt, add carrots saute 2 minutes, add paprika mix and add immediately parsley and mushrooms, tomato then mix, add water about 1 liter. Simmer for about 30 minutes until veggies cook. Add parsley and spinach just a few minutes before soup is done. You can add some crushed red pepper or cayenne pepper if you would like this spicy. Enjoy.

Cabbage with Paprika - Paprikas Kaposzta

Ingredients:

Sauerkraut 1 gallon drained and rinsed – push access water out by hand

3-4 bay leaves dried

1/2 tsp peppercorn whole

salt to taste

2 tbsp Hungarian paprika

2 cups cut cup onion

2 tbsp olive oil

optional: crushed pepper and cayenne pepper to taste

water to reach about 1/2 of the pot approximately 1 -1.5 liter

1-2 cut up tomatoes

Saute onion in olive oil for 3-5 minutes add salt and mix it together, add all other ingredients,, mix well, add water last, mix well, let it simmer for about 30-45 minutes until all flavors blend well together.

Variations you can add soy or any other vegetarian meatless pieces to the cabbage. Keeps in fridge for long time, also freezes well.

Lecso ingredients:

Equal parts of sliced onion, fresh or frozen tomato, and paprika  yellow wax, Hungarian or gypsy paprika is the best to use paprika can be sweet or spicy based on your preference, for this meal I used about one cup each.

salt to taste

spice options: crushed red pepper and/or cayenne 1/8 tsp

This dish can have a lot of variations I used 1/2 cup squash other things that could be added are scrambled eggs, rice, meatless sausage or tofu.

Saute onion for 1-2 minutes, add yellow peppers and salt. Cook and cover on low heat until paprika about half done for approximately 15 minutes.  Add tomato, squash and spices. Cook for another 15 minutes, mix occasionally. Enjoy. This dish is best fresh or next day.
